Whatever you do, don't buy the brand they are selling at Big Lots which I think is their own brand. They are much cheaper than you will see either on ebay or even at WalMart, but they are a huge pain in the butt. Several of our neighbors bought them and it is a constant struggle to keep them inflated. They work for a couple of days and then you see them all slumped in a heap. One is a snow globe, one is a santa and sleigh (on the roof yet!) and one is a snow man with a large top hat. We get a lot of wind through our canyon and that seems to batter them around more than they are meant to withstand.

I not sure about this. Water has a lot of Weight. Ever see those "Slinky" toys. You not want you Pool to get the same idea as a "Slinky". Maybe you could Build Up the ground to get it level? Maybe a few Landscaping Timbers or even rocks laid nice and fill in to get it more level. I have wanted to do the same as you, but, with the slope I not think it will work, hate to spend money to watch it Collapse and be Ruined.
